Fresh Mushrooms With Walnuts Recipe
This is a Spanish mushroom recipe that will satisfy any lovers of mushrooms in your family.
It serves approx. 6 people, and works well as a side dish or a main meal as long as you adjust the size of the servings.
Fresh Mushrooms With Walnuts Recipe
You Will Need:
2 Tbls butter
2 Tbs healthy oil
8 oz (3 cup) organic mushrooms
1/2 c. walnuts (chopped and toasted)
Two Tablespoons dry sherry
1 tbsp fresh lemon juice
one teaspoon orange peel or lemon peel – grated
2 T. fresh parsley (chopped)
Salt to taste
Instructions:
In a skillet or frying pan melt the butter with oil.
Increase the heat to medium/hot and put the mushrooms in the skillet, cook lightly for a few minutest, stirring gently.
Now add the sherry, lemon juice, walnuts and citrus peel. Heat the mixture for 60 seconds or so, mixing well to make sure the mushrooms are well coated with the liquid.
Add salt to taste, and sprinkle with chopped parsley just before serving.
