what is the difference between raw washed cane sugar and organic can sugar?
I recently purchased organic cane sugar from Costco and wondered why it was a different color from the raw washed cane sugar that I usually buy. The raw washed has not only a bigger crystal size but is also much darker in color, while the organic cane sugar has finer crystals and is almost white in color.
The differences that you cite between raw washed cane sugar and organic cane sugar is the way the sugar cane is processed (crystallized or centrifuged).
Pure Cane – Washed Raw
This type of sugar is crystallized from the initial pressing of 100% pure sugar cane. While it does not dissolve easily, it adds an interesting flavor when stirred into coffee, espresso or tea. Its crunchy texture is perfect as a topping on many desserts, and provides variety when sprinkled over waffles.
Organic Cane Sugar
Organic cane sugar is produced under a traceable quality program by an evaporation, concentration and centrifugation process. The organic sugar cane juice does not contain any kind of additive, coloring or any other chemical product, which in part, explains to color.
